
A wonderful day walk at Thornham Estate
Today’s adventure took us to the picturesque Thornham Estate, where the weather was simply perfect — glorious sunshine and a gentle breeze made for an ideal day outdoors. We strolled through the estate and forest, covering approximately 7.7 kilometers of scenic trails, immersing ourselves in nature’s beauty.
One of the highlights of our walk was gathering fresh elderflowers from the abundant wild bushes. Their sweet, fragrant aroma is a true sign of summer and the perfect ingredient for a refreshing homemade elderflower drink.
Homemade Elderflower Drink Recipe
Ingredients:
- 20 elderflower heads
- 1.5 liters of cold water
- 300g sugar (adjust to taste)
- 1 lemon, sliced
- 1 teaspoon white wine vinegar (optional, for preservation)
Method:
- Gently shake the elderflower heads to remove any insects or dirt.
- Place the elderflowers in a large bowl or container and pour the cold water over them.
- Add the sugar, lemon slices, and vinegar if using.
- Cover and leave to infuse for 24-48 hours in the fridge, stirring occasionally.
- Strain the liquid through a fine sieve or cheesecloth into bottles or jars.
- Serve diluted with still or sparkling water, over ice, for a refreshing summer drink.
